Cooking for my friends and family!

Thank you for taking a look at Flavors Unplugged.

I love to take traditional recipes and morph them - striving to give you flavors you have never encountered before. Others are recipes hard to find (some going back to the 1920’s).

How can I thrill you?


These meals are for the savory pallet. (Wine parring services availabe from my sommelier friends!)


The experience - unique!
 

After years of having people tell me I need to open a restaurant, and hearing horrible complaints about private chef dinners that were not impressive (more like simple catering), I’ve decided to give my friends and VIPs delicious food options available no where else!

 

My style of cooking focuses on the savory side of food life. Flavors that makes your senses melt and your eyes roll back in your head. Minimal salt and careful seasoning are key. (Medium heat at most because heat destroys your ability to appreciate the savory side of delicious!)
 

Yes, recipes are made from scratch. A few may use a foundation pack that I build on - but several are my unique creations. And everything is excellent and unlike the norm.


I love to create flavor twists that explode in the palet. Enjoy browsing through my list of menu options and let me know if you find anything interesting.

Appetizers

Wet your appetite with a bit of decadent savoriness!

Duck Cognac Pate with Jam

Sliced baguette with hints of exquisite German mustard and subtle apricots highlighting a duck moose pate with cognac. 

Charcuterie Board

5 cheeses, 3 meats, herb crackers and date-nut cake.

Special oil infused with secrets from Olympus, topped with fresh ground pepper. Served with fresh sourdough bread.

For poolside or relaxed gathearrings.

Asian Spiced Turkey Lettuce Wraps

The healthier side of lettuce wraps. Fresh ground, turkey (protein of your choice) delicately seasoned with Asian flavors and bell peppers for a savory result. served on butter leaf lettus leaves. Low sodium marinade.

Jambalaya (Chicken/Sausage)

Chicken & sausage. Old school 3-1/2 hour cook. Will blow you away. Never had a complaint since 2015!

Citrus & Spice Hamburgers

Moist (not greasy) burgers with a crazy delicious spin on flavors. 

Fr. Bill’s Herb Lamb Burgers

Decadantly delicious!! Makes your toes curl. Very hard to describe - they are that good!

Coop’s Fajitas

ONLY 3 INGREDIENTS!! Plus several techniques make these fajitas beyond belief. My kids refused to cover up the meat flavors with all the sides. They just piled up the meat and feasted on it!! What a compliment to the chef!! (I do the samething - they are that good!)


Beef &/or Chicken only.
Includes sautéed onions & peppers plus my crazy good guacamole (guaranteed you never ever had anything close to it!!).


Took a few years to perfect the procless, but no complaints in 3 decades!

Savory BBQ Ribs

Literally fall of the bone tender ribs. Traditional Texas BBQ flavors. None of this out of state junk or fusion creative stuff. Non-Texans don’t know any better and will eat whatever. You will be back for mine!!!!!!

Coop’s Texas Chili

A simple Texas authentic flavored chili (but I add beans… sorry!). The secret is in the proportions of seasoning and added veggies. Not hot, totally savory!!!


Perfect with cornbread, Fritoes Scoops, or make a chili dog!

Indian Red Beans

This is an awesome recipe my old neighbor gave me around 2005. She's from India and it's generations old within her family. Crazy good!

Savory - not hot. 

Chicken A-La-King

A perfect meal when you want something gentle on your stomach… or to satisfy a craving for it!


This mild creamy dish includes moist chicken, sweet English peas, celary, onion and lots of love.

Served over chow mein noodles, rice or in a puff pastry (your choice). 

Sloppy Joe’s (Really Good!)

Ok, yes. Every place I’ve had a Sloppy Joe at was horruble!!! So I created a sweet and savory vers that is based on my mom’s recipe. (I have no idea where she got it, but I come from 3 generations of awesome old school home cooks!)


if you don’t like it - return it to me and I’ll eat it for you!! (I don’t want you to suffer… LOL LOL)


Dinner

Main Courses

Polpettone with Roasted Veg Center and Tomato Basil

Blend of beef and pork with select spices influenced by Northern France,  Swiss and Germanic cuisine with a carrot and pea center, coated with a broiled blend of cheeses, plated on a savory tomato basil sauce. This is tour of flavors to remember. 

Herb Pork Loin with Al Dente Cabbage

Herb rubbed pork loin with a slightLy aldente cabbage bacon balsamic side. Definitely a crowd pleaser.

Lemon & Herb Lamb Chops 

Marinated lamb lollipops grilled medium rare that are so good I often get requests for a full rack portion per person from repeat orders… and not only are there no leftovers - they want more!!! 

Shrimp 4 Ways with Coconut Rice

Choose one:

a) Savory Jerk Shrimp

b) Spicy Jerk Shrimp

c) Benji’s Jamaican Shrimp

d) Herb Lime Grilled Shrimp

Citrus Salmon

Only use Scottish Salomon! No Alaskan due to the mixed breeding with farm salmon in 2022.

Marinated in a combination of seasoning, brown sugar and citrus oils, this meal will be your new favorite!


Includes aldente asparagus with roasted almonds, a dash of something secret and dash of Himalayan salt. 

Nancy Lou’s True Love Stew

Not cheap and 4-1:2 hours to make - but worth every bite!! Based on a 1920’s secret recipe my grandmother used, it includes savory ingredients (3 I can’t disclose), tender beef, sweet peas, pearl onions, and carrots. Was my #1 favorite my mom made!!!

I need to really like you to make it. I named it this way because, “You really have to love them to make it!”

A savory 5 berry purée with a creamy layer and pastry swan. 

Rum & Berry Cake

Handmade cake with select berries, cinnamon and a generous drizzle of dark rum. 

Cherry Comstock Cake

This rich and savory dessert has a graham cracker crust with a delicious creamy & nutty center topped with a sweet & tart cherry layer.  

it’s an old Sellers family recipe. (Mom’s maiden name.) Yes, there are tons of similar versions on the web… But they miss 2 critical techniques and a few added ingredients that differentiate mine - and will make you crave it in your sleep!!!!
